Truffle Infused Lardo

Capreolus Truffle-Infused Lardo is cured and fermented from the back fat of a pig. Rare breed pigs such as Oxford Sandy & Blacks are used thanks to their high fat content. The back fat is dry cured, blended with herbs and spices and then infused with English truffle oil.  

With a super silky mouthfeel and rich flavour, this lardo is excellent enjoyed as it is, served with wedges of squidgy focaccia, or draped over gnocco fritto - Italian fried dough. This lardo was awarded 2 stars at the 2020 Great Taste Awards. 

Capreolus Fine Foods sell artisan charcuterie made in Dorset using local, free range or wild meat. Quality and provenance are the two key principles to everything they do. All meat is cured using traditional methods - air-drying is done in temperature and humidity-controlled rooms (to avoid the turbulent British weather conditions) and beech wood chips are used to give a delicate smoke to certain meats.
