Emmer Mezzi Rigatoni, Set of 3

Pastificio Carleschi’s Organic Emmer Mezzi Rigatoni is made with stoneground wholegrain emmer, giving this pasta nutty notes of toasted walnut, hazelnut and dark chocolate. Emmer, known as farro in Italy, is an ancient grain, high in protein, with much less elasticity than modern wheat. While this means emmer dough doesn’t stretch or rise for breads, it’s fantastic for pasta.  

Grinding the grain with stone means none of the health benefits are lost in the milling process, while drying at a low temperature keeps the vitamin value high. These short, round pasta tubes are a versatile shape - try serving with fresh seafood, rich beef ragù or creamy sauces. 

Pastificio Carleschi is the first British artisan producer of organic dry pasta. With a focus on sustainability, they use ancient wheat varieties to make each shape, and flour sourced directly from British farmers. Following traditional methods including bronze extrusion and slow drying make the pasta the best it can be from a flavour and texture perspective.
