Pastificio Carleschi’s Emmer and Fava Bean Sedani Rigati is a nutrient-rich pasta, with a deep chestnut colour, sweet flavour and hint of fresh fava bean. Working in collaboration with Suffolk-based Hodmedod’s, this rigati is made with British grains and pulses.

Emmer, known as farro in Italy, is an ancient grain and high in protein, while fava beans are rich in vitamins, minerals and soluble fibre. Together they create a super pasta, with fantastic nutritional value. To retain all the goodness, the pasta is slowly dried at a low temperature. These long, slightly curved pasta shapes are ridged on the outside - great for sauces to cling onto. Try serving with chunky meat ragùs, roasted vegetables or fresh pesto.

Pastificio Carleschi is the first British artisan producer of organic dry pasta. With a focus on sustainability, they use ancient wheat varieties to make each shape, and flour sourced directly from British farmers. Following traditional methods including bronze extrusion and slow drying make the pasta the best it can be from a flavour and texture perspective.
