Dorset 'Nduja

Capreolus Dorset ‘Nduja is a hot, spreadable salami to stir through spaghetti, dot over pizza or spread over bread with cheese for an indulgent toastie. 

Originating in southern Italy, this hot salami paste is rich with Kashmiri chilli, cayenne pepper and a little fennel. It has a deep colour and great depth of flavour. With ‘nduja, a little goes a long way - add a spoonful to tomato sauce, or pair with cool mozzarella cheese. 

Capreolus Fine Foods sell artisan charcuterie made in Dorset using local, free range or wild meat. Quality and provenance are the two key principles to everything they do. All meat is cured using traditional methods - air-drying is done in temperature and humidity-controlled rooms (to avoid the turbulent British weather conditions) and beech wood chips are used to give a delicate smoke to certain meats.
