Air Dried Beef

Capreolus Dorset Air Dried Beef is the West Country alternative to Italian bresaola - serve with a drizzle of olive oil and shavings of Parmesan. Made with the silverside of grass-fed beef, it is cured with black pepper, rosemary, thyme and juniper berries before being left to slowly air dry. 

The result is firm slices, with a richness of flavour and herby undertones. It won 2 stars at the 2020 Great Taste Awards. 

Capreolus Fine Foods sell artisan charcuterie made in Dorset using local, free range or wild meat. Quality and provenance are the two key principles to everything they do. All meat is cured using traditional methods - air-drying is done in temperature and humidity-controlled rooms (to avoid the turbulent British weather conditions) and beech wood chips are used to give a delicate smoke to certain meats.
