Meet Mark and Giles of Two Spoons

We are called Two Spoons after our tasting spoons, which we received after 5 years of training. Having spent over 50 years combined in tea with the big brands we decided to go it alone and came up with two main blends. Our Bungalow Blend is named after the tradition of bringing the cream of the days crop back from the factory to the managers bungalow. Our Bucks blend is a nod to the county where we both live. We felt it was important to be able to experiment, so we also offer the single origin ingredients of those blends in loose form.

Our tea is grown and produced in Kenya, Sri Lanka and India. We select the teas we want to use by tasting them and then developing recipes for our blends. We have two partners who pack them for us, loose and into our tea pillows. We have put a lot of thought into how we make our teas sustainable, from the tea itself, to the pillow material and the outer packaging.

As far as tea goes, we feel it is often taken for granted and it is important that people know what efforts have gone into its existence. We have personally selected what has gone into our blends, and want to inspire curiosity through the taste, provenance and people behind our tea.

We are so lucky that tea drinking is such a communal activity and that it has so many fans, ambassadors, and ‘infusiasts’ out there. It’s a hero crop that tastes great, that is good for you, that has a great story…and it brings people together!

What’s the first restaurant you’re going to visit? The first place you’ll travel to?
We really want to get back out to the plantations again, a Sri Lankan visit combined with some amazing local food would be awesome.

What is your lazy go-to dish when cooking? Recipe?
For me it is lentil and bacon soup in the slow cooker. Very warming on a cold day and a great way to use up vegetable, like carrots, leeks and squash.

What’s the strangest dish someone has used your products for? Have you tried it?
We know that one of our customers using our tea to produce Kombucha, a drink made by fermenting sweet tea with a culture of yeast and bacteria. We haven’t tried it yet!
