Meet Kate of Pink Salt Shed

I’ve always made pesto, and especially since having children. They go from not hungry to absolutely starving, so pesto is good for them with some pasta. Once I made a big batch and thought that we’d never get through it, so approached the local dairy. I asked if they’d stock it to see how it went and they said yes. Since then, I’ve approached retailers further and wider from home. It’s grown and grown.

I believe that when pesto is bought it should be fresh and used in meals that week. There’s no preservative or additives in it to enhance flavour and there’s nothing in it to keep it on a shelf for 12 months. A lot of the process is making sure the microbiology risk factors of moulds and nasties are kept at bay, so there’s a lot of washing and preparing before whizzing. The jars and lids are sterilised, and everything kept to simple processes to keep the manufacturing time to a minimum. Packaging is a big consideration as well; not using plastic is so important to me. The food looks after our bodies and the packaging looks after the environment.

I think being in touch with the retail sectors that share values and ethics brings the food community together. There’s a common theme between us, which is honest and wholesome. Talking to people helps get the enthusiasm across which I think is key to success and branching out.

Wherever our food comes from, whether it’s animal or plant-based, it should be fresh and wholesome with as minimal processes as possible from origin to tummy. I want to share my pesto with the masses to prove that good quality needn’t always be expensive. Fresh produce and 100% food that our bodies know what to do with. There is such a depth of flavour that I can honestly say you’ll go ‘wow’ when you taste it!

What’s the first restaurant you’re going to visit? The first place you’ll travel to?

Soho Farmhouse, although our local pub The Red Lion (Long Compton) is awesome to have on our doorstep. I’m still wanting to visit Le Manoir when face masks don’t have to be worn at all. I need to feel the full experience of a place like this.

Where is your happy place?

At home with the family and pets. Although we do love a week away down by the south coast, in a cosy cottage with a woodburner and a good shop and pub nearby. I love cooking and find that doing it whilst on holiday is great. Shore fishing with the family is great fun and watching the dogs run along the beach is just amazing.

What is your lazy go-to / comfort food dish when cooking? Do you have a recipe?

Carbonara sauce that’s so quick & easy - onion, garlic, mushrooms, bacon, cream, egg (sometimes), that’s what I put in it!
