Meet Hedie of Husk & Honey

I spent a little time in Brazil a few years ago, and every morning would be greeted by heaps of fruit and the most delicious, crunchy granola, served atop bowls of fresh acai. Back in London, I couldn’t find any granola that was as delicious as that I’d found in Rio, but that also didn’t have mountains of refined sugars in. So, having discovered a gap in the market for fresh, great tasting, and convenient granola, Husk & Honey was born.

Our manufacturing process begins with a whole lot of research into the ingredients; everything needs to meet stringent quality criteria as well as being in line with our ethics. The next stage is getting ingredient samples and developing the recipe. Once confident, taste testing commences! Next, we consider the packaging; what is needed in terms of quantities and sizes, sealing types, whether the product needs to be airtight, how well the product is protected and so forth. With this decided, we next look at the product to establish the technical specifications; recording the recipe, the nutritional analysis, allergens present, pack size and the like. We always design the new products with the customer in mind, so the development is highly detailed.

The intricate details of each final product undergo the process above, with overwhelming focus on the person enjoying the product – how, when, who, where and why. These details inform every step of the research and development stages, resulting in carefully considered products in every aspect.

From the delivery, to the packaging, to the storage, to the raw ingredients and producers, the product itself, we aim to create products matching the quality of home-made produce, but with the convenience of store bought products.

Stoke Mill Stores, our friend Liam’s brand new restaurant in Norfolk. He’s an excellent chef so it will definitely be worth the trip!

What’s the strangest dish someone has used your products for? Have you tried it?
A current favourite is sprinkling the Quinoa & Buckwheat granola over ice cream with a modest drizzle of grassy olive oil and good quality salt crystals.
