Meet David and Karen of Capreolus

Curing meat was a hobby but it became a business in 2009, after the banking crisis closed the company that I worked for. Turning my hobby into a business was a more attractive option than being a labourer on a building site.

To make our products, we first select the raw materials. There can be no compromise, you have to buy the best to taste the best. We then dry cure the meat, ferment it, and air dry it. The air-drying process can take from a few weeks to over a year, depending on the product. Finally, we smoke it – if it is to be smoked. Smoke is another ingredient, and it should enhance the flavour and never dominate it. If all you can taste is smoke, then we have ruined some wonderful meat.

Our meats are produced by farmers who put love and care into the animals, and in turn we try to honour the animals by making use of as much of them as is possible and putting the same love and care into every piece of meat. We are very proud of what we do but it starts with trying to do the best for the animals that have been bred for us to eat.

Food isn’t fuel, it is to be savoured and enjoyed. Food is one of the greatest pleasures in life and we should be prepared to pay a reasonable sum for it. We talk about ‘fair-trade’ but expecting to have cheap food puts huge strain on every part of the food supply chain and leads to poor farming practices. We need to seriously improve what we are doing to our environment or we are going to reach the point of no return all too quickly. A significant part of that is being prepared to pay a fair price for the food we eat.

Where is your happy place?
For me – it’s a rifle range with my friends. Target shooting is a complete escape for me. I concentrate hard on the shooting and then relax with my friends. For Karen – it’s her garden. She is never happier than when she is planning, planting, and picking in her garden. Oh, and then I cook it!

What is your lazy go-to dish when cooking?
Spaghetti Carbonara. It’s quick and delicious, and we make the Guanciale!
