Maple Bacon Pancakes

American-style pancakes meets maple bacon in this indulgent breakfast recipe. We suggest using brown bananas that have just turned to get the best flavour and fluffy texture. If your bananas haven’t turned, you can roast them in the oven to soften. 


For the banana pancakes:
Bananas, 2, mashed
Eggs, 2 
Self raising flour, 96g 
Milk, to thin out the batter 

To Top:
Welsh Homestead Smokery maple bacon  
Maple syrup or butter, to serve 


1.To make the pancake batter, whisk together the mashed bananas, eggs and flour. Add a little milk to make a loose batter.
2. Add a little oil to a frying pan and place on the hob.

3. Meanwhile, turn on the hob and grill the bacon following packet instructions. 
4. To cook the pancakes, add a ladleful of batter to the pan – cook around 3 pancakes per pan at once. 

5. Wait until bubble start forming on the surface of the pancake and flip. 
6.Once golden on both sides, serve in a stack, top with bacon and a generous glug of maple syrup or slice of butter.
